Think I have that same NAPA thermostat - installed about 6 months ago in the
process of a head overhaul/valve job.  It's as you describe with a off centered
hole.  I wanted a 160 degree, but all they had was 180, so I went with that.

I had previously had the radiator recored and the car was running "cool";
routinely at about that "single mark" on the temp gauge.  The previous
thermostat, I believe was Nissan/Datsun and was also as you describe.  With the
new NAPA 180* thermostat, the car seems to routinely run a little above that
mark, say about 1/16 inch.  Still cool.

Don't think the problem is the thermostat.
