One of the wires is a black wire.  It is the ground wire.  The other wire
goes to the anti-run-on valve (which is probably missing).

Yup.  But the black wire will be needed with the three terminal switch.  If
you chose to not reconnect the anti-run-on valve (which is probably
missing) you can use this wire and the black wire and find the two
terminals that work the way you want. But if you intent to reinstall the
anti-run-on valve (which is probably missing) there is only one
configuration that works.  I have that documented at home but I don't have
it here.  Maybe someone else can fill in.
