You mentioned the smokey mtns.  There are some very nice scenic roads in 
that area.  I myself have taken my spit on some stretches of the blue ridge 
parkway that snakes from alabama to NY (i think!).  The blue ridge is pretty 
good about crossing near major highways so you can easily get back to 
civilization.  YMMV and my experience is only in the VA and NC area.
