Jeff,
The max cylinder overbore for the 260 is .030 inch. The 260
cylinder diameter is 3.8 inches, while the 289 and 302 have a cylinder
diameter of 4.0 inches (IIRC!), so you can't change a 260 into a 302.
Just get a 302 block and go from there.
