Short answer:  the Miata seats work fine with a roll bar.

To an extent it depends on the roll bar.  In mine, with the seat all the way 
rearward, the seat back hits the roll bar at about 1/4 reclined.  Also, I 
mounted my seats further aft than stock for more leg room.  I was careful 
when mounting the seats as not to angle them so my head would not bang the 
bar in an accident.  My roll bar is aftermarket one(brand x).

As someone else mentioned, bang in the bottom of the seat with a hammer so 
the seat won't rub the floor.  I cut that bottom area of foam out as well so 
I wouldn't sit too high up.
