You can tell...as you lean the mixture out, it'll really start to 
scream, then as you back the screw out there will be a sudden point 
where the engine starts to sound just a bit rough -- it's a dramatic 
difference in exhaust note.  I tune my engines so that at full throttle 
with no load they are just "in the rough".
