When I need to add coolant to my 67.5 1600 I depress the thermostat
with a long screwdriver which lets the air out that is below the
thermostat.

Another way is to drill a small (1/8") hole in the flange of the
thermostat to allow the air to bypass the thermostat.

In a normal cooling system I know a mechanic that would insert an aspirin
tablet to hold the thermostat open.  When the water level gets up to the
thermostat (which may not be reachable with the housing in place, and
the hoses hooked up), the aspirin would disolve and the thermostat would
close!  For quite a time I thought that he had a lot of headaches to have
a bottle of 100 aspirin in his toolbox!
