Another option to planing the head and having to argue with the difference in height with the pushrods, is to plane the block. The benefit of this is you take less off to raise the compression more.

Hold on for one minute! Before you go recutting those grooves, Why not leave the deck flat so you can use one of Mordy Dunst's copper head gaskets! Alternatively, you can use a stock Mk3 head gasket.
