Is there any reason to assume that the carbs were ever set up for the Triumph engine? (In case you don't realise) SU's are calibrated by needle changes, the profile of the needle being quite specific to the engine and its exact specification. The jet adjustment is only to fine tune the idle mixture. You can get somewhere near the correct calibration by trial and error, but the only real way is a dyno session by someone who knows SU's.
