The key word you are looking for is PWM.  This is Pulse Width Modulation
that basically just turns the LED's on and off very fast.  The amount of
time they stay on determines how bright they appear.
One note of caution.  Read the instructions that come with a PWM dimmer
carefully.  Some require that the LED's connected to them are NOT
grounded.  This can be a real pain the butt for LBC's where everything is
metal and all the metal is grounded.  If possible try to get the specs for
the dimmer before you buy and make sure it is referenced to the input
ground.  It can be a lot of work to float all the grounds on your dash
wiring.  Another issue to consider is that the PWM modulation can introduce
noise into your electrical system.  Most PWM dimmers operate in the 100Hz
frequency range.  This is noticeable on your radio if it is older or not
well installed.  It can also cause issues with electronic ignition modules
if they are not well shielded.
