I have no experience with AZEK plastic board but I suspect getting any 
of the typical drywall stuff to bond to it is unlikely to be successful.

Can you mitigate the water intrusion? And then use some water resistant 
wall board?

If not, perhaps covering the seam between the 'drywall' and the plastic 
boards with some trim?
