And wall storage off from workspace which can be heated or cooled as necessary...The heavy vinyl curtains work well but can cost more than real walls!
And a ventilated welding area.
I’m thinking about having a slab poured behind my garage and erecting some open storage space back there as well as a small enclosed area to hold the furnace, compressor, and a heated cabinet for things that should not freeze.

Put a workbench close to the lift area; maybe on wheels. You can also never have too much shelving. Or lighting especially as we age and eyesight isn't quite what is used to be! And maybe have a small room sectioned off for your lathe milling machine and maybe surface grinder.
