Well, assuming that both cars are negative earth...

The reason for connecting the earth cable to the chassis or engine of 
one car is this.  The battery to be charged might produce hydrogen, 
and that hydrogen is most likely to collect as a gas pocket around 
the battery.  So when you disconnect the cables from around that 
battery you want to make sure there is no spark that might set off an 
explosion.  Attaching the earth cable to the chassis or engine means 
it is attached somewhere else further away from the battery.  Once 
you have disconnected that one, the other one is in no danger of 
sparking (unless the two vehicles are touching).
