My brother's GT6 ran hot (inside cabin) even in stock mode (so with 
performance parts it ain't gonna be any better - perhaps improving your under 
bonnet cooling would be something to work on). With the pre-prep you did .. 
your engine parts are really most likely fine. Your parts guy is just 
supporting your worst fear! If you ran the motor with absolutely no oil 
pressure for 10 minutes that might be a different story.
Your tach cable seems to be coming up against some rigorous resistance - 
might want to give your tach a good cleaning/lube for starters.

 out before starting the engine for the
first time i was careful to check everything twice and ran the starter motor
without ignition (to prevent starting) off and on (10 / 20 second increments)
till i saw full oil pressure on an oil pressure guage (hooked up to engine)
and noted oil coming out rocker arm onto that assembly.  also checked
antifreeze flow, level before starting.  i called the person/dealer i bought
all the engine parts from.  he says that since i did not prime the oil
passages with an electric drill before starting the engine i have ruined it
and that is what is causing the engine heat...
