You are correct about the viscosity not being so much of a problem.
However, just like the coolant in the radiator, the temperature of the oil
circulating through the engine strongly affects the temperature of the
engine and the oil has an optimum operating temperature range. And if it is
28 degrees outside and the oil is freely flowing through the oil cooler with
that 28 degree, 60 mph wind blowing across it, that is going to be one cold
running engine and the oil will never reach its optimum operating
temperature range nor will the engine.

Regarding the comments made earlier about installing a thermostat in

oil cooler line to ensure
the oil is at correct temperature, I assume that's to make sure it's
at
proper viscosity and within a certain temperature range, but isn't
mulitgrade (5W-50) oil designed to work at any temperature and be at
the
correct viscosity for the temperature its at (other than some
extreme,
which most of us never see)?
