I have seen some traffic here about refinishing wood veneer 
dashes, but does  anyone have any good advise regarding replacing 
the veneer? A local furniture  refinishing shop has told me to 
glue the veneer with contact cement. However,  I wonder if that 
would stand the heat of several hours of the hot Texas sun. 
Should I use wood glue instead?

Either should work fine for your purposes.  Wood glue is a little
easier to work with in that it allows you more time to adjust the
fit, etc., before it sets up firm.
