Congratulations
1. The bumper bars you describe are after-market items, usually from AMCO.

2. The '73 has the vinyl/foam filled things at the top edge of each door.
  The '71 does too, with little pulls molded in. They are called out as
crash pads in the catalogs and glue on. That's           why they fall off.

The rear end noise could be a bad joint or a busted mount.

As for the rust, you could try any of the waxy/oily things on the market.
Anything you put on would be better than nothing, exactly what Triumph
used.
