I'd probably just go plywood, but the trick thing is slap a layer of 
masonite on top of whatever you end up with for the work 
surface.  It's smooth, so you can easily brush or wipe up 
debris;  it's soft, and wont ding up metal pieces;  if you cut or 
drill into it -- so what?!  When it gets torn up, throw it out and 
get a new $10 piece.
