Try a different battery.
I had precisely your experience. Turned out to be latent damage from having
been rear-ended several months before. Just by blind luck - early on before I
started down a rabbit hole like yours - I happened to notice an odd little line
in the Bakelite of the battery at the ground post. Looking closer there was a
web of tiny cracks radiating out from the post. It took months for them to
develop to where the post would intermittently lose contact once the battery
fully warmed.  Car died- stare at it scratching head for a while (thus
allowing the battery to cool), starts fine, warms up......repeat.
Come to think of it that may be when I started going bald.
If the battery doesn't fix it, try new battery cables. (Pournelle's First Law
of Computers- check the cables.)
