I'd definitely opt for stainless, rather than the old style chromed version.

I used stainless pistons from Sunbeam Supreme in the UK, but I'd be surprised 
if your US suppliers don't also carry them. I seem to recall I payed around 
$40 per pair, excluding the seal kit.
