I need to change the differential in my Spitfire. It is possible to
pull the stub axles, and remove the "pumpkin" from the differential
housing while it is still mounted in the car? I really don't want to
mess with the rear mount bolt and top spring mount bolts.

In a word, YES!
But it is not as easy as it sounds. You need to remove the road spring
so that the pumpkin is free enough to drop down sufficiently to get the
front part out of the case.
