Thanks for your reply. The update from yesterday is that I will stick with
the 180 thermostat.
During the drive in yesterday morning, it pretty much stayed right at 180 at
65 degrees ambient outside. The ride home was very different. At 80
degrees ambient, the car did well on the freeway at about 185 to 190. After
being in heavy stop and go traffic for about 20 minutes and after a long run
at nearly 4 K rpm, the gauge started to creep up to between 205 and 210.
Bottom-line: I think I will stick with the 180 degree thermostat for now.

When my temperature sensor started failing, it started telling me that
the car was running cooler than ever, so you might be suspicious of
yours. As your car warms up, it should come right up to the thermostat
temperature (plus or minus a bit), then stay around there, moving up or
down a bit depending on ambient, load, etc. Example: When I had the
160 thermostat in with the new temp sensor, the gauge would ramp up to
just under 170, then pause there for a while, before heading higher. my
new 180 thermostat sends the gauge to just under 190 for the pause.
If you have an ohmmeter, you could check out the sensor. See my tech
