I'm wondering if it's really worth the work when compared to
    properly set-up carbs

For most purposes, no. But a big win of fuel injection over carbs comes
from getting more of the air and fuel mix into the cylinders. In a carb,
energy is expended to draw the incoming air through a venturi. This is to
create a low pressure area that will suck in the gasoline. With a fuel
injection throttle body, there is no need for the venturi, so less of the
piston's suction is wasted by forcing the incoming air through the restriction.
More fuel in the cylinder, more power. And you can get a better air/fuel
ratio over a wider range of operating conditions as well.
