I have used a nickel based grease that comes in a
small metal can with a brush inside the cap. Mainly
to make it possible to remove the part again without
having to scrape off the gasket leftovers from the
head and manifold. It also work well on turbochaged
engines where gasket failure due to high temperature
is a problem. Copper grease does the same thing but
if it's nickel based, it's not as visible as copper if you
want a "cleaner" looking assembly.
