I have never owned a 2000w/ SUs, but I have owned a 1600 w/ SUs and I still
tinker with my 240Z and it has them.
Taking off the emissions equipment shouldn't affect the running/starting of
the car quite like that. I would say possibly it's an internal engine
problem--rings, valves,etc...
However, the black smoke does indicate an over-rich mixture. Have you tried
leaning the carbs out at all, or checking your air filter to see if it needs
replacing? It also could be the level of fuel in your float chambers, but I
think that's a stretch.
