These kind of restorations have to be labors of love. As much as we may love our cars they are just not yet worth the kind of cash it takes to do a frame off resto if you are farming it out to shops to do the work. Just ask the guy in my neck of the woods trying to unload his TR7 that he paid too much for, put too much into it, and now wants to sell it. The dude is hosed as he is asking more than NADA for it. (And the isn't even finished yet)
