USG's Durock system is gray - might blend in more. I did two showers
with their system and it was great. Got it through a local flooring
supplier. Some Home Depots carry it too.

In John's case, since the plastic wall is already there and likely to
expand/contract differently than the drywall, I'd just cover the gap
with some trim of some sort - something like

If it is just a short seam, you could also get a self adhesive floor
tile or luxury vinyl tile and cut a strip a few inches wide to cover the
gap.
