Alan,
First of all you have a very nice car from just seeing the engine bay. While I would not discourage anyone to enter their car in Concours let me tell you that it is something that is much easier to accomplish while your car is being restored, not when it is finished as yours is as you will have to dismantle a fair amount  just in the engine bay from what I can see. However if this is a challenge you are ready to tackle, so be it.
Read and re-read everything in the Concours Guidelines several times over and then tackle the tasks in section, such as the engine bay, then the interior, then the trunk area. Not knowing when your car was restored, it is difficult to say to what level it is already at. As an example, the Guidelines now require that undercoating be added in various areas under the car and then, the undercoating is painted over in body colour. In order to accomplish that, if not done already, will certainly involve an fair amount of work and perhaps dismantling of several components to accomplish the task.
Perhaps you already have done the job of determining what level your car is currently at and that you know what it will take to make it a Gold level car. If not, that to me, would be the first steps to determine if you feel this is something you want to tackle.
