Simon I have triple Webers on my car. I have a fuel regulator and run at 3psi.
Sometimes I try it at 3.5 and I can't say I've noticed much difference but 3
is a number that gets thrown around. They don't need high pressure but they do
need flow. I had to upgrade my Facet fuel pump to the Red Top because when I
really floored the throttle the car would die as it wasn't get enough fuel.
Luckily I discovered that at our pre season track day and not during an event.

I had my Webers set up on a rolling road without the air filters. If i floor
the throttle with the filters on I get some hesitation nearer the top end.
Worth taking into consideration when you have them properly set up.
