...as a general method I put the metal side against the head, thinking that
it acts as a sort of heat sink and helps "cool" the head. It also is a bit
easier to clean the manifolds than the head when the gasket sticks.

It's been way too long since I took the lump apart.  On the manifold to
head gasket which side goes against the manifolds the fiber or metal?
