Jim this is a basic step in rebuilding drum brakes.
Especially important with hard lining materials because they take a looong time to bed if not arced.
Most replacements are done to standard original drum diameter so if you are using new drums they might be close.
If you are getting the linings from a rebuilder, they should be able to arc the shoes to the drum diameter.

I’m just picking a new set of rear shoes for this next season and am wondering if it’s necessary to re-arch a set of shoes to a new set of drums.
I can buy new drums for 60-70.00. I don’t know of anyone locally that will re-arch the shoes anymore. I didn’t do it last year and I was having to adjust my bias
quite a bit for a while until they assumed the diameter of the drum. I want to do it right this time.
If new shoes & drums together mean I don’t have to re-arch them then that sounds like time/money ahead.
