Isn't it mostly because the ports can be layed out so much straighter and smoother?

So, why is a cross-flow head supposed to make more power than a head with intake and exhaust on the same side?   You’d think that once the charge got sucked in, squeezed, ignited and blown back out, it wouldn’t have any clear idea of which side of the head it had come in on in the first place.
 
What gives?
