[Roadsters] secret to pulling 1600 temp sensor intact?

Craig,

The sensors usually get swedged into the hole if the retaining nut is 
tightened too much. There may be a buildup of crud between the head and 
the sender, so you may be able to free it up with something that will 
dissolve the crud in there, but I have never found anything to do the 
job. When they have been stuck in the past I've had to use a drift and 
beat them out from the inside after removing the thermostat housing.

There is a screw in sender available that I've used as a replacement for 
the ones that use a gland nut. They have never seized on me, but others 
may have different results. I don't remember what year it was intended 
for, but I got it from the dealer.
