If they are saying that one side is braking more than the other, I'd
like to know how they know and how they test that.

It could be do to the uneven wear of the shoes on one side of the
car. Have you
adjusted you brakes lately? Because the wheel cylinders can only
move the brake shoes a finite amount. So if one set of shows (left
or right) is worn more than the other side, the cylinder can't put as
much pressure on the worn shoe. Consiquently, the side with the worn
shoes will not brake as much as the other side. To correct this, you
will need to adjust the rear brakes.

The way I adjust my brake shoes, is:
a. If the rear wheels are NOT off the ground, you will need to jack
up the car to adjust the brakes.
REMEMBER USE JACKSTANDS ONLY TO SUPPORT THE CAR. YOU'LL BE UNDER
IT AND YOUR LIFE DEPENDS ON IT.
b. On the back side of the backing plate you should see a elongated
piece of rubber. This is a plug to keep water & dirt from getting
into the brakes. You need to pry that out with a screwdriver.
Then you'll need a good sized screwdriver or the special brake spoon (adjuster
tool) to adjust the adjuster (the star wheel)
