Oliver---With the information given, I'll take a stab at it.

IF...you no longer have the (hot) water pipe running thru the manifold, then long runs at highway speeds could cause the carbs to get cold. The engine would then act as it would when starting a cold engine, and require CHOKE.  One way to test this is to pop the hood and feel the intake manifold and carbs to see if they are cold, after such a run.  If so, you'll then have to figure a way to keep the carbs and/or fuel warm during these episodes.

72 tr6, gp2 cam, triple carbs, lightened flywheel, shaved, ported, polished, 
decked

runs fine around town, but coming off the freeway when you take it out of 
gear it just dies.

any thoughts?
