Sounds just like a problem I had with my '76 XKPinto back in '79-80.
After MUCH time and expense replacing the emissions and ignition systems
piece by piece, I solved the problem by replacing... the thermostat!

Actually, I found the problem thanks to my trusty Herald. I had recently
performed routine maintenance on it, including replacing the thermostat.
There was something I didn't like about the new 'stat (exactly what is
lost in the mists of time). One day, the XKPinto behaved so badly, I
decided to take the Herald to work the next day, despite bitter cold.
Guess what? It behaved exactly like the Pinto, once it thoroughly warmed
up.

So maybe your engine is overheating, and you just don't know about it
because the temperature sensor is after the 'stat.
