Jonathan:

It does sound like the clutch release (or throwout) bearing.  Surely they
would have replaced this when doing the clutch work - but not familiar with
your shop.

If it is "chattering" when you disengage, then it's probably in need of
replacement.  If, on the other hand, it is making a slight "jingling" sound
when pedal is out and gearbox in neutral, check the slave cylinder return
spring. May be allowing the bearing to rest against the clutch housing
"fingers".  This will definitely lead to premature failure of the bearing.
