The easiest way might be to put some non-reversable temperature indicators
onto your radiator inlet and outlet and insulate them well so they reach
about the same temp as the coolant. After a drive take them off and check
how hot they got. You can get them through McMaster Carr. If you opt for
thermocouples, you can get stick-on thermocouples from Newport for about $12
each (stick them on and insulate as above) and Newport could sell you a
cheap thermocouple thermometer too (your multimeter may have a thermocouple
input?)

Both these methods are non-intrusive and easy. The first one would be very
cheap too.
