I sent this earlier today but didn't see it on the list. Here's another try...

One way would be as you suggested, but easier with a radial arm saw. Use a
blade or a molding cutter head. Lower the blade into the workpiece to the
desired depth and turn the motor portion around to form the depression in
the workpiece.
