Who knows if this guy is a real authority, but its on the internet with
nice pictures so it must be true... :-)
Looks like there's no reason to choose a grade 5 over a grade 8 bolt.
The only thing the article doesn't address directly is which bolt will
stand up better to this "non-torqued sheer" loading situation.
And, of course, that's also what's making me think a hitch pin is the
smarter idea.
