I know someone who nearly asphyxiated working in a non-vented grease 
pit.  And, yes, he's taller than the pit.

The National Electrical Code considers grease pits to be an explosion 
hazard, requiring explosive proof fixtures and conduit seals.

Everybody considers them a fall hazard.

I was serious when I suggested you'd have a hard time insuring one.  
Talk to your insurance company before you build one.  If you don't, you 
may find yourself without cover when someone falls in.  (Worse, in some 
states, you might find yourself without cover for anything.)
