Porting and Polishing a 1800cc Head

I  am having a valve job done to a "B" head and I feel the shop is first
rate BUT when I inquired about porting and polishing the head the gent that
is doing the work stated that "he had never done it on a "B"  head and he
did not know how far he could go before he ran into a water jacket" could
someone that has done this with success tell me the MAXIMUM tolerances  for
doing this procedure. THANK YOU
