Ryan,
   Yes, iy would be difficult, not worth it, and unwise. The convertible
body had significant changes made to stiffen the pan to keep body flex
down. You would likely spend more on the conversion than you would if
you just went out and bought a nice factory convertible, and you'd
also get all the other benefits of the later car, like a 5 speed box
and fuel injection if you went for an 81 model. I don't think $2500
is dreaming too much when it comes to pricing for a 79-81 model.
   Besides that, you have a car that is significantly stiffer than any
convertible, and may become just as collectible owing to the fact that
so many have bit the dust already.
   Wayne says "don't do it!"
