Cliff---It's not "springs, old valves, or years of unleaded gas" that
cause valves to "tick". What you're describing is excess lash (gap)
between the rocker pads and the valve stems.  You need to find out if
this gap is really increasing shortly after they are set to standard.
(.010) If so, it's possible that your rocker shaft is worn through its
case-hardening and won't hold the adjustment at the rocker pads.  This
shaft is not hard to check for wear, if you're so inclined. Or ask your
mechanic to do this, and assure oil is flowing down thru the shaft.  

Less likely, but possible is that the lobs on the camshaft are wearing
down. Again it's necessary to document which valves always seem to need
the adjusting.
