If the valves are sticking it's because the machine shop didn't allow enough clearance between the stems and guides. When the engine warms up what clearance there is disappears and the stems seize in

Did you use any kind of valve seal on the guide? The small o ring seals that are supplied with the gasket set are designed to be placed on top of the valve keeper, to prevent pooled oil from sliding
