Hi Ron, I chose a gloss finish when I redid my dash. I like the finish and it doesnt seem to me to be too "glossy". If you check out the triumphowners link below you can view the dash in three differ

Spar varnish is a good choice. It has the weather resistance you need to keep the wood in good shape given the relatively high UV exposure it is going to see in a convertible. 3-4 coats of that with
