The answers to your questions depend entirely on who you want to run
with. (HMSA, VARA,CSRG, SCCA, etc)
  
The following applies to HMSA:
  
A 66 coupe would probably not qualify as a BP car. Have never seen one
at any HMSA event.  And FYI, BP GT350s are limited to 289 CI (.030 overbore OK
Windsor heads would be OK
  
It would most definitely not qualify for Trans Am w/o period history.
  
  
  
As for VARA, CSRG, SCCA etc, their requirements are less stringent and
I won't (can't?) quote requirements since I am not intimately familiar
with them.  I know of GT350 replicas with 377 Stroker motors running in SCCA
vintage (no comment) Also, early Corvettes prepared to very late race
prep.
  
Check out the group you intend to run with.  I would build it as a
Trans Am replica, this would be more 'authentic' than BP.
TA ci limit is 305.  Original 66 Trans Am cars had stock 11"
front brakes and 10x2.5 rear drums.  Though this changed rapidly
by 1970.  Our car has 12" Tbird/Lincoln front brakes and the stock
11" front disks transplanted to the rear. All this was done when
the car was raced in the late 60s.
