valve cover, the idle goes up a bit and becomes more consistent. Could this
modification to the plumbing be causing my problem? Do I need a real PCV

Sounds like you have either:
1) a major air leak into the crankcase or
2) a lot of blowby.

The crankcase ventilation is based on a certain amount of air passage
through the crankcase.  Too much air passage will lean out the mixture. 
Make sure all yoru gaskets are in good shape, the oil filler cap is fitted
securely and the oil dipstick isn't letting in too much air.  Also make
sure your hoses between the valve cover and the carbs are in good shape and
that the TEE isn't split.

Next step may be rings.
