the temp gauge started to approach the "hot" mark then coasted to a stop,

car had such excellent cooling that not having the fan had not even

It wasn't the cooling system. Without the belt you also don't have a water
pump. If you had a water pump you likely would not have noticed the loss of
fan.
In low enough ambient conditions inline engines will have sufficient
cooling just through the block. Since the temperature was below 40 deg F
and you had plenty or moving air (at speed) you were able to pull this off.
I doubt you could have with a V type engine.
