This is a real tough nut to crack without an agreed value policy.... Perhaps you have a letter from your club stating the value? An appraisal of any kind? A bill of sale? Reciepts for all your parts? It's very hard to put a value on a car that's not there. Is there annother route you can claim? If it was stolen from your garage perhaps you could claim it on your homeowner's policy?
